Lentil Soup Recipe

This lentil soup is very easy to make, delicious and 100% vegetarian.

1 onion chopped
2 cloves garlic
2 medium carrots chopped
1 medium leek sliced
2 cups red lentils washed
1.5 litres vegetable stock

Soften the onion in plenty of olive oil over a low heat. Add the chopped or crushed garlic and the sliced leek. Cook for a few minutes

Add the carrot and the stock. Simmer gently for 5 minutes

Add the washed lentils and bring to the boil. Simmer gently over a low heat for 30 to 40 minutes. Add more stock if its starts to get too thick.

Liquidise or not as you prefer, and serve.
