Absolutely delicious and a candidate for easiest-to-make soup in the world!
1 onion chopped
4 medium leeks sliced
500g potatoes peeled and cubed
2 litres vegetable stock
Soften the onion in olive oil. Add the sliced leek and cook for a couple of minutes.
Add the stock and the potatoes.
Simmer on a low heat for about 30 minutes.
