Easy, tasty and vegetarian.
1 onion chopped
2 sticks celery chopped
1 medium carrot chopped
1 teaspoon sugar
1kg tomato passata (chopped tomatoes can also be used)
1 litre vegetable stock
1/2 cup white rice washed
Soften the onion in olive oil and add the celery. Cook on a low heat for a few minutes.
Add the rest of the ingredients – except the rice – and cook for 10 minutes.
Add the washed rice and cook for a further 20 minutes.
