One of my favourites, and 100% vegetarian
2 onions chopped
3 cloves garlic chopped/ crushed
4 sticks celery chopped
3 carrots chopped
1 tin of cannelloni beans (about 400g)
2 tins of chopped tomatoes (about 800g)
2 litres of vegetable stock
A little macaroni or other small pasta
Soften the onions over a low heat in olive oil. Add the garlic and celery and cook for a few minutes.
Add the carrots, the tomatoes and the stock. Simmer on a low heat for about 20 minutes.
Add the cannelloni beans and the macaroni and simmer for a further 10 minutes.
